If there was one thing on my cooking bucket list that I most definitely wanted to tick off in 2016, it was to try out oats in a smoothie. I've been fascinated all the while with the idea of a on-the-go drinkable breakfast and what better than chilled, nutritious and filling glasses of oat smoothie on hot summer days. So now my packet of rolled oats is sitting in a jar, ground and ready to be added to my latest obsession, every morning. To tell you the truth, I am hooked! There are various ways of including oats in your drink. You could use the overnight soaked oats or add the oats along with other ingredients directly into the blender. The process I like to use is to grind the oats first either in a coffee grinder or a food processor to a coarse powder. Then I can use it whenever I want to. That saves time and gives the smoothie a creamier yet thick consistency with some texture. After I shot this first combo, I made 2 other combinations with stone fruits, coconut milk, herbs, chia seeds and lots of other things. Healthy, quick and easy fritters made with roasted beetroot and feta cheese, Perfect for breakfast, lunchbox or a nutritious snack. This recipe is a regular in our house. The basic fritter gets made, remade, revamped in multiple ways by every single member of the house. In fact last year, the boys (then 5 years old) had to do a little cooking demonstration at school and guess which recipe they chose? It is that easy and versatile. It was Sugar et al's birthday this week and my blog turned 3. Such amazing 3 years and so much to look back and feel proud about. Sometimes, I feel I am not even the same person anymore. I have evolved in more than one way along with my blog. It's like I was on a path to self-discovery all this while. I want to thank you from the bottom of my heart for sharing this journey with me. No Churn Ferrero Rocher and Raspberry Ice Cream

Ferrero Rocher Ice cream that is made without an ice cream machine (no churn) with chopped ferrero rocher chocolatess and a raspberry swirl to make an easy, simple frozen treat. No churn ice creams have been all over the Internet in recent times. While they yield mostly similar results which is a delightful sweet frozen treat, the process used and ingredients vary from one another. There is the hugely popular frozen fruit and sugar instant ice cream, the whipped egg white version, the semifreddos, and this one with condensed milk and super simple to make. While some argue that this is not real ice cream, I would say that 'the proof of the pudding is in the eating thereof'! What you enjoy eating while making at the convenience of your own home and is a great substitute to store bought food is always a great option in my books. I take no credit for this recipe. The flavour additions are mine but the basic recipe has been made over and over again by many. It's a tried and tested ice cream using condensed milk and cream.
