It was one of those really hot summer weeks and I wanted to have fun indoors but not with the usual backyard barbecue. It was a spur of the moment idea but something that didn’t need much effort or time. I invited a few friends over, brainstormed some fun toppings, ran to the grocery store and before I knew it, everything was ready to go. Naturally I wanted the best quality ice cream that I knew my guests would love, so I decided to try Bulla’s latest frozen range. To say that it was a fun party, would be an understatement. Everyone said that they felt like kids again. We had a few pre-decided themes like the His n Her loaded ice creams (inspired by Valentine’s day) and Beach Inspired Loaded Ice Creams and the rest was DIY. If you are a lover of Matcha green tea, I have the perfect dessert for you. If you're not or perhaps unfamilar with it, that is about to change! My husband loves drinking green tea but I have never shared the same love for this healthy superfood with amazing health benefits. However, what I immensely love are the desserts infused with matcha tea powder. Not only do they look fabulous in that stunning shade of green but they taste pretty unique as well. I cannot think of a better pairing than white chocolate because they just complement each other in the most delicious way. I've used matcha tea powder in the tart shell as well in the filling. In fact, though the tart dough took on the beautiful green colour quite easily, I was a little bit skeptical if the tart shell would remain green upon baking or turn into a golden brown rendition of the same. I can't seem to have enough of blueberries this season. These blue- purple berries are the easiest and a delicious way to decorate and flavour desserts.While I'm truely a fan of the entire berry family, I think blueberries are the most hassle free of the lot. No hull, no seeds just plain purple gorgeousness. If you didn't know already they are high in antioxidants, low in calories and come with a number of health benefits. Lavender on the other hand comes from the same family as some of our popular herbs like mint, rosemary and sage. I absolutely adore lavender in desserts. it took me a while to master the right proportion and right pairings. You know the concept of 'how much is too much'! It is so important. We don't want a dessert that smells like soap. Culinary lavender is available in quite a few stores as well as online in Sydney. I bought mine over 6 months now and it is till fragrant and very easy to use. I've made this cake a few times, with and without lavender. Chocolate Olive Oil Cake

This cake has been on my must-try list for years. I've heard as well as experienced in many occasions that oil lends a softer, moister crumb. But since I like butter too much, I've just been putting it off. The reason? We whip butter in most cases with sugar to get that tall, light, fluffy texture which is not possible with oil. And of course the flavour and taste of good old butter. I'm a fan! However, with the New Year comes new resolutions and the willingness to experiment a bit more than I would usually do the rest of the year. So I gave it a go. The first time, the the cake turned out a bit dry but nevertheless it was gone in minutes as the kids were at home and I was after all baking the first chocolate cake of the year. The second time I added warm water to the cocoa powder instead of adding it with my dry ingredients. It was a success. The cake was a moist, chocolatey deliciousness that tasted amazing with a chocolate ganache topping. The biggest plus is that it is such an easy cake to put together. Simple and sweet.
