I'm finally getting into the Christmas spirit. The last few weeks have been an absolute blur of activities since we got a new puppy. He is adorable and a little ball of joy. However, I never anticiapted the amount of work, attention and time I would have to give to this hyper active baby of mine. He actually makes me feel old since I struggle to keep up with him. To tell you the truth, managing twins wasn't as hard as managing our baby Biscoff. I know, everyone remembers his name. The vet. doggie care, strangers...he is my dessert puppy:-) Speaking of dessert, spices are the hero of the season. I have plenty of gingerbread recipes on my blog already so I thought I'll create something that looks slightly different but is easy to make. Back in the day when I used to run high teas for my cafe restaurant, I worked with marzipan a lot to create sensational edible toppings. It's not summer until you get to enjoy mangoes. In Australia, the first mangoes appear as early as Spring. Though I woudn't say that they are at their best, it's impossible to resist the aroma as you pass through the aisles at your greengrocer or supermarket. Mangoes pair beautifully with coconut. Together they are a burst of the tropics in your mouth. This a deceptively simple dessert to make, with absolutely no baking invoved. I have used sillcon rectangular molds. You could use round or square molds and even make them in serving glasses. Mango Coconut Mousse Bars Makes 4 bars For the base 7-8 digestive biscuits2 tbsp coconut oil, meltedFor the mango and coconut filling3 tsp powdered gelatine150 ml thin (pouring) cream120 ml Coconut cream40 g caster (superfine) sugar3 tbsp mango purée Mango jelly 3/4 cup mango purée1/2 tsp powdered gelatine Place the biscuits in a food processor and pulse to form fine crumbs. Do you like the taste of grapefruit? To be honest, I don't enjoy having it on its own, however, the refreshing citrus flavour with a slightly bitter aftertaste is so perfect in a dessert. This absoloutely divine tasting Grapefruit and Orange tart has a few different elements to it but it is definitely not difficult to make. All of them can be made ahead of time and assembled at the time of serving. This Grapefruit and Orange Tart has a lovely shortcrust pastry base, a grapefruit custard filling, a layer of orange curd, a white chocolate decoration that complements the citrus duo beautifully and some vanilla chantilly cream to balance the sweetness. It is sure to impress your guests both by it's apperance and by taste. If you didn't want to make all the layers, you could easily leave out the orange curd or white chocolate spiral and it would still be fanatstic. Want to see more Orange desserts? Orange KitKat Brownie Cakes

I've always had a thing for Kitkat chocolates. Not only do I love eating them, I find them the perfect decorations for pastries and cakes. You might have come across them before in my posts and if you follow me on Instagram, you might have noticed a few creations in the past using them in various desserts. I noticed this orange flavoured ones and I loved the two toned effect on the top. I just knew I wanted to make Orange KitKat brownie cakes with them. Unfortuantely, it only allows me a max of 30 seconds so I am unable to show the creations from scratch but hopefully it will be upgarded to the 1 min duration like it has for a few craetors. The brownie cakes are soft and delicious. They don't have a cracked top as I use this recipe for a cake like texture. But nonetheless they are AMAZING to taste.
